Short answer

Why cleaning matters

Ice is food. Scale from minerals slows harvest and reduces output; slime and mould in the bin, water trough and distribution tubes contaminate the ice. Health inspectors check ice machines, and a dirty one is an easy violation to avoid.

Step by step: descale and sanitise

  1. Prepare. Wear gloves and eye protection. Have the maker's approved ice machine cleaner (often nickel-safe) and a food-safe sanitiser ready. Never mix the two.
  2. Empty the bin. Stop production at the end of a harvest, remove all ice and discard it.
  3. Run the clean cycle. Put the machine in clean mode and add cleaner to the water trough as the manual specifies. The machine circulates it over the evaporator.
  4. Remove parts. Take out the water trough, distribution tube, curtain or splash shield and ice thickness probe. Soak them in cleaner solution, scrub with a soft brush and rinse.
  5. Sanitise. Reinstall parts, run the sanitise cycle with sanitiser solution, and wipe all food-contact surfaces and the inside of the bin with sanitiser.
  6. Restart and discard. Return to ice mode. Discard the first batch or two of ice.
  7. Condenser and filter. Brush or vacuum the condenser coil, and change the water filter cartridge.
  8. Log it. Record the date, tasks and initials in the cleaning log below.

Water filters
